In a recent collaboration, recipe box company, Mindful Chef, has partnered with nutrition science firm, Zoe, to debut a line of recipes that emphasise gut health. Tim Spector, the co-founder of Zoe, curated these recipes from his publication, ‘The Food for Life Cookbook,’ aiming to spotlight the companies’ commitment to a plant-rich diet. This initiative aligns with Mindful Chef’s mission to simplify healthy eating, offering a range of options designed to reduce reliance on ultra-processed foods.
The newly announced recipes, available in November, include a smoky hake, artichoke and sundried tomato stew, aubergine parmigiana, sweetcorn and spinach dhal with curried cashews, and a gochujang bean bowl with eggs and kimchi. Each dish has been crafted to ensure a sumptuous dining experience without compromising nutritional benefits, adhering to the guiding principle of incorporating 30 different plants weekly.
Giles Humphries, co-founder of Mindful Chef, expressed enthusiasm over the partnership, citing the seamless integration of Zoe’s scientific know-how with Mindful Chef’s culinary offerings. Humphries emphasised that this collaboration supports their overarching goal of making nutritious eating accessible and enjoyable. In his words, “By incorporating a variety of plants and gut-friendly foods, we’re making it easier for our community to enjoy delicious meals that support overall well-being.”
Echoing this sentiment, Tim Spector remarked on the importance of making healthful eating both straightforward and satisfying. Through this partnership, he noted that individuals can effortlessly adopt Zoe’s dietary approach, characterised by over 100 recipes grounded in six core health principles. Spector stated, “The Food for Life Cookbook brings to life my six key guiding principles for health in over 100 delicious and nourishing recipes, showing just how simple and enjoyable it can be to adapt to a way of eating that’s great for your gut.”
Further underpinning this collaboration is Zoe’s recent financial infusion of £11.7 million from Coefficient Capital. The funding intends to bolster Zoe’s expansion into the US market, a venture that complements their growing food partnerships, having previously joined forces with M&S and Waitrose in the UK.
